What better way to use up some leftover pastry than jam tarts. They're so simple and it would be a shame to let the pastry go to waste. These have some of my homemade blackberry jam in them.

Carrot muffins with an orange & cream cheese frosting
You can't have any type of carrot cake without the cream cheese frosting in my eyes. The orange in this one adds a lovely edge.

Monkey Bread!
I've wanted to make this for ages but just not found the time or excuse! It's basically cinnamon bread bit baked together with syrup. A lovely 'tear & share' bread that would be great to put in the middle of the table to nibble on after dinner. Either that or serve it warm with ice cream.

Pudsey Cupcakes
We had some fundraising fun in the office for Children in Need so I put these Pudsey cupcakes together to help the cause.
Bright Flower Cupcakes
Some of the prettiest I think. I can't take all the credit for them though - the idea comes from the 'What's New Cupcake' book. I love that book - loads of great ideas for weird and wonderful ways to decorate cupcakes.
Rotherfield Christmas Fair
For the first time ever, I took some of my baked goodies along to the Rotherfield Christmas Fair. I had the 4" Christmas cakes I'd baked, all sorts of confectionery including vanilla fudge, peanut brittle and coconut ice, as well as biscuits and 4 flavours of cupcakes.

A classic
I think this was one of the first things my mum taught me to bake. Sometimes it's the simple one's that are the best and a good Victoria Sandwich rarely disappoints. This one has got some of my homemade blackberry jam in the middle.
Squidgy brownies
Chocolate brownies speak for themselves. Each slice of this weighs a ridiculous amount and covers your entire mouth in chocolate with a single bite. Neither of those comments is a complaint :o)

Sundried tomato & basil soda bread
Savoury??? Yep, it's some savoury baking from my own fair hands (and you really do need to get your hands stuck in to this one to mix it all together). It went really well with Amy's lovely casserole - a good dipping bread to mop up the sauce.
Cute cupcakes
I whipped up this box of cupcakes the other day. It was fun coming up with some decorations for them. They probably look at bit more suitable for warm weather rather than the current autumnal conditions but at least they look pretty!

Coloured sugar
I picked up a great new tip from one of my many cake books this weekend so thought I'd try it out - using colour pastes to brighten up some dull old sugar. Dipping some frosted cupcakes into it is a lovely cheap way to decorate them.

Lemon drizzle cupcakes
I had a bit on an experiment with the recipe for these (by experiment I mean I made it up!). They turned out really well; nice and lemony all the way through with a slightly crunchy syrupy topping. Smiles all round!

Gift biscuits
We went away this weekend and visited an Aunt (technically my mum's dad's first wife's brother's wife's sister!) so I thought I'd take her some biscuits as a little gift. Luckily I made some extras for us to much on the journey!

Raspberry swirls
Whilst hunting for my macaroon recipe tonight I found this one. I managed to make a huge mess of the kitchen in the process (rustic baking I call it!) but it was worth it if only for the smell. It's a cross between homemade swiss roll and scones. Yum :-)
Cinnamon & coconut macaroons
I had some egg whites left over and these took all of about 10 minutes to make. I wanted to try them with the cinnamon in - turns out it works!
Down at the farm
This is definitely one of my all time favourites. I had complete freedom to do whatever I wanted and I love how bright and colourful it is. It made it for my niece's 3rd birthday and she dragged everyone who visited over to have a look at her cake. I think that meant she liked it!
Sugar flowers
These were made using flowerpaste. Technically they're edible, but I'm not sure they'd actually taste that great. They look pretty though. My favourites are the roses but I do like the Lilly too.
Cookies
My husband's current favourites are the jammy ones in the background. He refers to them as a jammy dodger. I think they're more of a bakewell biscuit minus the icing. I've tried them with a mars bar filling too which also go down well. I've lost count at the number of times I've had to share that recipe with people who've tried them! The one's at the front (snickerdoodles) were a previous favourite and come a close second these days. They're at their best straight from the oven so don't last long in my house.
Fruit cakes
Yesterday I gave my arms a workout and baked some mini fruit cakes. They're for a christmas fayre in a few weeks but I wanted to give myself plenty of time to soak them in brandy before I ice/decorate them. They're only 4" square :-)
Raspberry frangipane tart
We were off to our friends for dinner Sturday night (plus X Factor viewing!) and as a good dinner guest my husband promised we'd make dessert. I didn't just want to roll out any of the 'old faithfuls' so I had a hunt through the books. Now pastry isn't something I venture to make often, although I'm not sure why as it's not all that complicated. I saw this fruity frangipane tart in one of my many baking books and thought I'd give it a try. The smell of it on the drive over meant it nearly arrived minus a bite!

A bit of UFC ground and pound for the boys.It's a shame the restaurant smashed the fence that I'd painstakingly iced out before they delivered it to the table! Matt was still appreciative though :-)

Ollie is a big Star Wars fan so I put this one together for his 6th Birthday. I knew nothing about R2-D2 before, but I certainly do now!
Captain Sensible
For reasons that will remain under-wraps here, our friend is also known as 'Captain Sensible'. It was therefore fitting to create this for his 30th Birthday. Note the tank top and grey streak in the hair - ha ha!
Australia
A friend was off to Australia for a year so I made this one for her leaving do. Chocolate, chocolate and a bit more chocolate was used here!

My blog!
Finally, after months of talking about it I've started on the path to getting my little cake company up and running. I've got a name "rosybake" and now I've got a blog.
The intention is to use this space to post updates and pictures of my latest creations. I have been a busy little baker in recent months so there might be quite a few to start with!
